Chocolate Chip Biscuits for Santa

Merry Christmas from all of us at GF Oats Australia. What a year it has been for everyone, we just can't wait for Xmas day. We thought the best gift would be to give you a delicious biscuit recipe options to bake up some treats for Santa. 

GF Oats Choc Chip Biscuits 


  • 1 cup of GF Oat Flour
  • 1/4 cup of Gluten Free Flour 
  • 1 tspn baking powder
  • pinch salt
  • 50g Butter or Nuttlex 
  • 1/4 cup of sugar
  • 1/4 cup of brown sugar
  • 1 tbsn of milk
  • 1/2 tspn of vanilla
  • 1/4 cup of shredded coconut
  • 1/2 cup of choc chips 
  • (optional you could use cranberries)

Line your baking trays with silicone sheets or baking paper and preheat your oven to around 160oC.
Add the flours, baking soda and salt to a bowl and use a whisk to blend together.
I used my Thermomix to blend the butter, both sugars, milk and vanilla extract.
Once they are well combined add in slowly the dry ingredients until well combined.
Finally hand stir in the coconut and the choc chips. 

Use a teaspoon to scoop small amounts of dough onto the tray. Gently flatten slightly. Pop into the oven for around 12 minutes until they have browned. Leave on the tray to cool. 
Made about 12 - 15 small cookies.
